Basic recipe:

SPONGE CAKE
300 g Sponge cake
300 g soft wheat flour biscotto
400 g sugar
600 g eggs
200 g water (about 30-35°C)
1,800 g Total

INSTRUCTIONS:
Mix all of the ingredients in the mixing machine with whisk, at maximum speed for about 6 minutes. Use the dough as you are accustomed to doing.
The recipe must be adapted to the technique and tools used.
